21 oz/600 g large prawns
5 oz/150 g cherry tomatoes
3 garlic cloves
1/ Peel the prawns leaving the last ring and tail. Peel and mince the garlic. Rinse and halve the cherry tomatoes.
2/ Wash and remove the ends on the zucchini. Use a mandoline or julienne vegetable peeler to cut zucchini into spaghetti-like noodles. Blanch these noodles for 1 minute in salted boiling water. Drain in a sieve or in a steamer basket.
3/ Heat a dash of oil in the wok. Add the prawns and garlic and sauté 5 minutes over high heat. Salt and pepper. Add the tomatoes and zucchini spaghetti. Sauté for 5 minutes over high heat.
4/ Drizzle with lemon juice and serve immediately.
